Irish Soda Bread
3 cups all-purpose flour
1 tablespoon baking powder
1/3 cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 egg, lightly beaten
2 cups buttermilk
1/4 cup butter, melted
Directions
1.Preheat oven to 325 degrees F. Grease a 9x5 inch loaf pan.
2.Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
3.Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

Bread Pudding w/ Raisins
16 slices bread
1 cup raisins
1/2 cup chopped pecans
2 cans evaporated milk
4 large eggs
4 tablespoons butter
3/4 cup packed brown sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1.PREHEAT oven to 350 degrees F. Grease 13 x 9-inch baking dish.
2.COMBINE bread, raisins and pecans in large bowl. Combine evaporated milk, eggs, butter, sugar, vanilla extract, cinnamon and nutmeg in medium bowl. Pour egg mixture over bread mixture; combine well. Pour mixture into prepared baking dish. Let stand for 10 minutes.
3.BAKE for 35 to 45 minutes or until knife inserted in center comes out clean.
4. I served with whipped cream on top. Extra YUM!

Biscuit and Gravy Casserole
1 pound ground pork sausage, your preference
1 (8oz) package cream cheese
2 (8oz) packages refrigerated crescent rolls
DIRECTIONS: Preheat oven to 350 degrees F.
In a skillet, cook sausage and drain. While sausage is hot, stir in the cream cheese until melted and the mixture is
creamy.
Open one can of crescent rolls and form the dough into the shape of a rectangle,
closing the seams to make one big sheet of dough. Place in a lightly greased 8x8 baking dish.
Spread cream cheese and sausage mixture on top of dough, leaving a 1/2" area around the edges.
Repeat steps with the other can of crescent rolls and lay the dough on top of the cream cheese and sausage mixture.
Pinch the upper and lower dough edges together.
Bake for 15-20 minutes or until crescent rolls are done. Cut into squares.

Yogurt Muffins
These are not too sweet, part of why I liked them :-)
1 cup Fiber One® original bran cereal
1 egg, slightly beaten
1/4 cup vegetable oil
2 containers (6 oz each) vanilla yogurt (or any flavor you like!)
1 1/2 cups all-purpose flour
1/2 cup packed brown sugar
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1/2 cup berries, fresh or frozen (defrosted)
1. Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottom of each muffin cup. Place cereal in resealable food-storage plastic bag; seal bag and crush.
2. In medium bowl, stir together eggs, oil and yogurt. Add cereal, flour, brown sugar, baking soda and salt; stir just until dry ingredients are moistened. Gently stir in berries. Divide batter evenly among muffin cups, filling each 3/4 full.
3. Bake 18 to 20 minutes or until golden brown. Immediately remove from pan.

Hobo Dinner
This is about the easiest recipe you can get, my hubby introduced this to me and now it's one of my favorites!
Ingredients: Really anything you want to use :)
I use-
1 lb hamburger
3 small potatoes, diced
3/4-1 cup frozen pepper/onion blend
1/2 cup frozen corn
Steak Seasoning to taste
You'll need 3 squares of foil, 10" long I would guess. Divide hamburger into 3 patties and place one on each square. Divide remaining ingredients among each square, on top of hamburger patties. Top with seasoning, I'm pretty generous with mine :-) Wrap foil around ingredients. Cook over medium coals for about 20 minutes, turning a few times. Open and enjoy!

Slow Cooker Ribs and Cabbage
2-3 lbs. ribs (I used spare ribs)
1/2 head of cabbage, cut into wedges
1/2 small onion, coarsley chopped
3 pieces of bacon, chopped
1 1/2 cups of apple juice
2 tbs. of apple cider
Steak Seasoning, your favorite (I used Greek Seasoning)
Directions:
Put cabbage wedges in bottom of slow cooker. Fry bacon until crisp, add to slow cooker.Add onion to slow cooker. Sprinkle ribs with seasoning and brown ribs in bacon grease, add to slow cooker. Mix apple juice and apple cider, then pour over all. Cook on low 8-10 hours.

Red Beans and Rice Plus
I always call this my Jambalya but I guess it really isn't, still good though :)
Ingredients:
1 box red beans and rice
6 oz (I use half of a 12 oz package) kielbasa, sliced into fourths
1 can diced tomatoes, slightly drained
1 celery stalk, sliced
3/4 cup (or eyeball it like I do LOL) frozen pepper & onion blend
Dash of crushed red pepper if you want a little kick
Directions:
Start beans according to box.
Cook for 15 minutes, stirring occasionally. Add rest of your ingredients and cook about 15 minutes more, until celery is no longer crunchy. Remove from heat and let sit for 5 minutes. Enjoy! :)
